Arizona Caviar

 

While visiting my sister Bev in California she prepared a little snack that has been a favorite ever since the trip.

I make this all the time and so far everyone loves it.

I consider it healthy.

Why not? It is packed full of all kinds of vegetables.

Arizona Caviar 1

Chop both peppers in 1/4″ inch pieces and put in large mixing bowl

TIP FOR CHOPPING:

Many of you have most likely seen one of these in the store or the “only seen on TV” ads.

I inherited this from my step-dad and almost threw it away before I realized what a valuable kitchen tool it is.

I use the small squares to do the peppers

The large one to do the tomatoes

It is so easy.

Chop green onion and cilantro and add to peppers

Chop tomatoes 1/2″ and add to other mixture

Add drained black beans and stir

Add corn and dressing. Season to taste. Refrigerate to allow flavors to blend. Best if made a day in advance. Good for about 7 days

Serve with Lime Flavored Tortilla Chips

Ingredients

  • 2 Large Tomatoes, Chopped
  • 1/2 Green Bell Pepper, Chopped
  • 1/2 Red Bell Pepper, Chopped
  • 1/4 cup Green Onions, Chopped
  • 1/4 cup Fresh Cilantro, Chopped
  • 1 can Corn, Drained
  • 1 can Black Beans, Drained
  • Salt and Pepper to taste
  • 1 1/2 cup Zesty Italian Salad Dressing
  • 1 bag Lime Flavored Tortilla Chips

Directions

Step 1
Chop both peppers in 1/4" inch pieces and put in large mixing bowl

Chop green onion and cilantro and add to peppers

Chop tomatoes 1/2" and add to other mixture

Add beans and stir
Step 5

This is a favorite of ours and always tastes so refreshing.
