Best Potato Salad for Your Summer BBQ

Potato Salad

This is one of those salads that will please the mayo or salad dressing person in your family. Adding equal parts mayo and salad dressing makes this a favorite for everyone.

I don’t know about you but I will not and refuse to eat a store bought potato salad. One of the reasons I consider myself a food snob. Let’s face it, if you’re eating a potato salad it isn’t because you’re sticking to a diet. There is no diet involved in this salad. That is all right with me. I love Potato Salad and sometimes you just have to go for it.

There are a few things besides mixing Mayo and Salad Dressing that make this wonderful. Dill Pickle Juice is the next item, and third but not to be forgotten is the sugar. That one came from my sister Allene.

Well here you go if you want to Wow the crowd for your BBQ this summer.

  • 5lb Red or Yukon Potatoes (cooked and cubed)
  • 12 Large Hard Boiled Eggs (cubed, reserve 1 for garnish)
  • 1/4 cup Onion (chopped, small)
  • 2 tablespoons Dill Pickle (chopped, small)
  • 1/4 cup Celery (chopped, small)

  • 1 1/2 cup Mayonaise
  • 1 1/2 cup Salad Dressing
  • 1/4 cup Sugar
  • 2 teaspoons Dill Pickle Juice
  • 1 teaspoon Salt
  • 1 tablespoon Dijon Mustard

Dressing (Optional)

  • To Taste Celery Salt
  • To Taste Salad Surpreme
  • To Taste Lowery's Season Salt
  • To Taste Onion Salt
  • To Taste Garlic Salt
  • 1/4 cup Canned Milk

Step 1
Cook potatoes and eggs. Let cool. Dice peel then dice potatoes and eggs. Reserve 1 egg for garnish slice and set aside. Chop celery, onions, and pickles.
Step 2
Add all the the chopped and diced ingredients to a large mixing bowl. Set aside to mix dressing.
Step 3
In separate mixing bowl add ingredients for dressing.
Step 4
Mix well. You may think I have lost my mind on some of these but the secret to this is first of all the mixture of salad dressing and mayonnaise. Second the sugar and third the pickle juice. I use the canned milk if it is too dry. You can just add more mayo and salad dressing though.
Step 5
Add dressing to diced ingredients and stir together until mixed well.
Step 6
Place in your serving bowl. Sprinkle with paprika and the remaining egg that is sliced. Chill until ready to serve.

I might have to try that. Is is white vinegar that you use or another flavor? I do use the regular mustard sometimes too. Last few years I have been addicted to the honey mustards.
