Bev’s Lemon Melt Away Cookies


If you love lemon like I love lemon, well then here is the cookie for you.

My sister Bev is a wonderful cook. This is a recipe I got from her. The only thing I have changed on it was to double the frosting.

WARNING: You can’t eat just one. I can’t leave them out on the counter. Before I know it they’re all gone. But they are so small it doesn’t really seem like I’ve eaten that much. At least I tell myself that.

Without further ado here it is.

This is a Lemon Shortbread Cookie. They will melt in your mouth.



  • 3/4 cups Butter (room temp)
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Fresh Lemon Zest
  • 1/3 cup Powdered Sugar
  • 1/2 cup Corn Starch
  • 1 1/4 cup Flour


  • 1/2 cup Butter (room temp)
  • 2 teaspoons Fresh Lemon Juice
  • 2 teaspoons Fresh Lemon Zest
  • 1 1/2 cup Powdered Sugar


Step 1
Grate and juice lemon for cookie and frosting.
Step 2
Set aside for frosting in fridge.
Step 3
Beat butter until soft. Add Lemon juice and zest. Mix again.
Step 4
Add powdered sugar, cornstarch and flour.
Step 5
Mix until moist.
Step 6
Separate dough in two pieces. Roll about 1" diameter. Store both in fridge for at least a couple of hours.
Step 7
Pre-heat oven to 350 degrees. Using a sharp knife, cut each roll into 1/4" slices. Place cookie slices onto ungreased cookie sheets. Bake approximately 8 to 12 minutes or until bottoms are light brown. Remove from oven, carefully remove from baking sheet and cool on wire racks.
Step 8
In medium bowl add butter, lemon zest, lemon juice and powdered sugar.
Step 9
Mix until well blended.
Step 10
Frost cooled cookies.
Step 11
Now you're ready to serve and enjoy. Great for a party.
