Chewy Ginger Cookies with Lemon Glaze 1

My friend Debbie gave me this recipe. It has been a favorite around our home. Then at the suggestion of my cousin Justien. I added the lemon glaze. This just puts it over the top. I tried lemon glaze and lemon frosting. Lemon glaze was the winner.

Chewy Ginger Cookies with Lemon Glaze Recipe

2 ¼ cups all-purpose flour

½ tsp. ground cloves

1 tsp. ground ginger

1 tsp. cinnamon

2 tsp. baking soda

½ tsp. salt

¾ cup butter, softened

1 cup sugar

¼ cup dark molasses

1 large egg

3 ½ oz. (1/2 bag) Ginger People® Crystallized Ginger Chips or *chopped crystallized ginger.

Preheat oven to 375°F. Sift dry ingredients together in bowl. Set aside.

Using KitchenAid Mixer add butter and sugar. Cream together until light and creamy. Stir in molasses and egg. Add Crystallized Ginger. Stir until mixed. Add dry ingredients to wet mixture. Mix well. Form 1-inch balls. Place on parchment paper-lined cookie sheet, 2 inches apart. Bake 8-10 minutes. Remove while still soft. Glaze cookies while still warm with recipe below.

Lemon Glaze Recipe

2 cups powdered sugar

1/3 cup fresh lemon juice

1 tsp. lemon zest

Mix all ingredients together in small bowl.

Frost cookies with pastry brush while still warm.

Original recipe adapted from the ginger people.

*I used Crystallized Ginger from my local grocery store. It was a little harder because you have to chop it yourself. So if you can find the chips from Ginger People it would be easier.
