Creamy Herb Salmon Pie with Lemon Dill Sauce Recipe

Who doesn’t like a great salmon recipe? I know most cooks or chefs would use a puff pastry. I haven’t had very good luck trying to use puff pastry. So I decided to use my pie crust and it turned out great.  See what you think. We loved it.

Preheat oven at 375°. Over medium heat sauté mushrooms and garlic in oil, season with salt and pepper. Set aside.

Chop desired herbs

Mix cream cheese, lemon zest and herbs. Set aside.

Roll out pie crust very thin. I use my Never Fail Pie Crust Recipe. Line a baking sheet with nonstick baking mat or parchment paper. Add first piece of Salmon

Season salmon with salt and pepper. Add small amount of cream cheese mixture to salmon

Add second piece of salmon. Season with salt and pepper. Add more cream cheese mixture. Top with small amount of mushroom mixture.

Roll out pie crust to thin layer. Place on top of salmon.

With pizza cutter trim pie crust leaving about a 1” edge.

Pinch to make decorative edge. Score the top for breathing. Beat egg and brush top of salmon pie.

Bake at 375° for 30 to 40 minutes or until golden brown. Prepare Lemon Dill Sauce while salmon is baking.

Ingredients

  • Pie Crust ((my Never Fail Pie Crust Recipe or store bought))
  • 2 tablespoons Butter or Oil
  • 1 cup Chopped Mushrooms
  • 1 clove Garlic, minced
  • Salt and Pepper
  • 2 (8 oz.) Skinless Salmon Filet
  • 4oz Cream Cheese, room temp.
  • 2 tablespoons Each Fresh Chopped Dill, Thyme, Chives & Basil
  • 1 teaspoon Lemon Zest
  • 1 Beaten Egg

Directions

Step 1

Lemon Dill Sauce Recipe

In small saucepan, melt butter. Add remaining ingredients, mix well. Over low heat, cook and stir until thickened (do not boil).

Or place all ingredients except dill in Blendtec.

Using the soup setting once. This will cook and thicken.

Add fresh dill and pulse once.

Ingredients

  • 1/3 cup Plain Greek Yogurt or Mayonnaise
  • 1 Large Egg Yolk
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Honey
  • 1 teaspoon Chicken Bouillon or Cube
  • 1 tablespoon Fresh Chopped Dill

Directions

Step 1
