Easy Sweet Corn Tamale Cakes Cheesecake Factory Inspired

Sweet Corn Tamale Cakes 1I remember going to Cheesecake Factory with my sister. She kept telling me how good the Sweet Corn Tamale Cakes were. I read the description and it really didn’t sound very good to me. She ordered them. When they arrived they didn’t even look very tasty. Not sure how but she convinced me to have just a little taste. The rest was history. My poor sister had to share her meal with me. Talk about wonderful! This is one of those things that you start to crave. I had to figure out how to make them. I know I usually do everything from scratch but this time I’m short cutting a few things. But this works out really well when you need that Sweet Corn Tamale fix.

  • 1 bottle Salsa Verde (any brand just use your favorite)
  • 1 cup Salsa
  • 1 cup Sour Cream
  • 2 Medium Tomatoes (diced)
  • 2 Medium Avacodos (diced)
  • 6 tablespoons Cilantro (chopped)

Tamale Cakes

  • 3 cups Frozen Sweet Corn (divided)
  • 1 cup Butter (room temp)
  • 3/8 cups Sugar
  • 1/4 teaspoon Salt
  • 1 cup Masa Harina (corn flour)
  • 1/4 cup Flour


Step 1
Preheat oven to 400 degrees. In Blendtec or blender puree 2 cups of corn.
Step 2
Add pureed corn to butter, salt and sugar. Mix well.
Step 3
Add masa harina and flour to corn mixture. Mixing well again.
Step 4
Now using the other cup of corn pulse in Blendtec or blender. Pulse just a second. Do not puree this. You will want corn chunks.
Step 5
Add this corn to the other mixture. You may have to hand stir because it will be a little stiff for a mixer.
Step 6
Using a large ice cream scoop I place on parchment paper. Shape and flatten with your hands before baking for 20 to 30 minutes. Turn over and bake for about another 5 minutes.
Step 7
While baking tamale cakes prepare sauce. In Blendtec or blender mix together salsa and sour cream until smooth.
Step 8
Warm Salsa Verda spread a small amount under each tamale. Spoon salsa mixture on top of tamale. Sprinkle with chopped tomatoes, avocados and cilantro.
