Grilled Salmon, Avocado, Citrus Salad

Well I guess it is time for me to post a healthy option. Life isn’t just about desserts. Oooooh did I say that? Yes I did! Do I mean it? Well I guess only time will tell. We all know I have an incurable sweet tooth.

I had a few things around the house and thought it was time to pretend I was on Chopped or something like that. It turned out pretty good.

Grilled Salmon, Avocado, Citrus Salad

Ingredients

salad

  • 2 (6 oz.) salmon
  • 2 red grapefruit
  • 3 oranges, divided
  • 1 avocado
  • 6 - 8 cups mixed salad greens

dressing or marinade

  • 1/2 cup dill flavored olive oil
  • 1 1/2 tablespoon fresh grapefruit juice
  • 1 tablespoon fresh orange juice
  • 1 teaspoon fresh lemon juice
  • 1/2 - 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon dry thyme
  • Zest from orange, grapefruit and lemon to taste
  • Salt and pepper to taste

Directions

Step 1
To remove pith from oranges and grapefruit cut small slice off top and bottom of fruit. Stand on end to cut down sides all way around. This will remove the peel. Working in a small bowl, cut between the membranes to release segments from oranges and grapefruits. Refrigerate until ready to assemble salad. To get juice for dressing or marinade just squeeze the membranes into another bowl.
Step 2
In small bowl add juices, zest, mustard, garlic, and spices. Whisk briskly while slowly adding olive oil until well blended. Season to taste with salt and pepper.
Step 3
In large zip lock bag add 2 – 3 Tbs. of marinade to salmon. Let marinade in fridge for at least 1/2 hour.
Step 4
Make sure your avocado isn’t too ripe. It will be too mushy to grill. Cut into ¼” slices. Add 1 tbs. marinade. Place on grill until you get some really nice grill marks. Set aside until ready to assemble salad.
Step 5
Cook salmon in a frying pan on med-high heat until lightly seared. About 2-3 minutes on each side. Cut in large pieces.
Step 6
In large bowl toss together salad greens, orange segments, grapefruit segments and small amount of dressing. Sprinkle with salmon pieces. Garnish with remaining sliced orange and grilled avocado.
