Grilled Salmon Salad

 

I really try to slip in some healthy options for us. I can’t tell Dennis that it’s healthy or right away he won’t like it. Just the word healthy will do that. I’ve learned that I just let him know dinner is ready. With that he loves it.

But for those of you that would like some tasty healthy option this came about from just looking in the fridge and figuring out what would be good.

You can’t lose with Salmon. I love a good vinaigrette. I have found that they mix better and easier with the. The Blendtec Twister Jar is just right for a vinaigrette.

I grilled most of it but you could use stovetop if you want.

It was so good we all but licked the plate. Yummy!

I found a peach, sliced it up added a little honey and then caramelized.

Love the Blendtec Twister Jar. It is just right for dressings. Add all but the dill and lemon zest. Just push the whisk button.

Add the dill and lemon zest and pulse a couple of seconds. Refrigerate while preparing rest of salad.

Grill salmon, onions and peppers.

Plate baby spinach, onions, peppers and peaches. Grizzle with small amount of Lemon Dill Vinaigrette.

Top with Grilled Salmon and drizzle with small amount of Lemon Dill Vinaigrette. Enjoy!

Ingredients

Carmalized Peach

  • 1 Medium Fresh Peach
  • 1 tablespoon Honey

Lemon Dill Dressing

  • 3 tablespoons Fresh Lemon Juice
  • 1/4 cup Extra Light Olive Oil
  • 1/4 cup Non-Fat Plain Greek Yogurt (or Sour Cream)
  • 1 teaspoon Balsamic Vinegar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Fresh Ginger (Grated)
  • 1 tablespoon Stevia (or Sugar)
  • 2 tablespoons Fresh Dill
  • 1 teaspoon Lemon Zest

Salad

  • 1 Medium Onion (Sliced Thin)
  • 1/2 Medium Red Pepper (Sliced Thin)
  • 2 Salmon Filets
  • 4 cups Baby Spinach

Directions

Step 1
Add honey and sliced peaches. Toss to coat peaches with honey. Add a small amount of cooking oil to pan after it gets hot add peaches and grill for about 3 minutes on each side. Set aside, let cool while preparing rest of salad.
Step 2
Using Blendtec or Blender add all ingredients for Lemon Dill Dressing except for dill and lemon zest.
Step 3
Use whisk button to mix ingredients. Add dill and lemon zest. Pulse a couple seconds. Put in small bowl and refrigerate while putting together salad.
Step 4
Grill sliced onions, peppers and salmon.
Step 5
Plate spinach, peaches, onions, and peppers. Add a small amount of Lemon Dill Dressing.
Step 6
Top salad with Salmon and drizzle with another small amount of Lemon Dill Dressing. Serve and enjoy.
