Lemon Bars

I got this recipe from my good friend Kathy Himle. It has become a family favorite. So light and refreshing.

Lemon Bars

Serves 20-36
Prep time 15 minutes
Cook time 45 minutes

Ingredients

Crust

  • 1 cup butter, room temperature
  • dash salt
  • 1/2 cup powdered sugar
  • 2 cups all purpose flour

Lemon Filling

  • 1/4 cup all purpose flour
  • 2 cups sugar
  • 4 Large beaten eggs
  • 6 tablespoons fresh lemon juice
  • Garnish with powdered sugar

Directions

Crust
Step 1
Combine butter, salt, powdered sugar and flour. Mix well.
Step 2
Press into 9”x 13” pan. Bake at 350° for 15 minutes or until light brown.
Lemon Filling
Step 3
Whisk flour and sugar. Mix in beaten eggs and lemon juice.
Step 4
Pour into slightly cooled crust and bake at 350° for 25 minutes.
Step 5
Sprinkle with powdered sugar
