Lemon Scones Are Great For Brunch

I love scones. In Utah we often refer to fry bread as scones but this time I’m really talking about that English Style Scone.

I was doing a segment on Fresh Living with Strawberry and Raspberry Freezer Jam. I didn’t want to just have jam sitting out for a display so I started thinking about what would work with the jam have good presentation as well.

The Lemon Scone won out. I worked for several days to come up with the right combination of ingredients.

When all was said and done I decided to use some of Harmon’s wonderful Artisan Breads. But I still have the Lemon Scones that are great.

Great with the Strawberry Freezer Jam, great with Raspberry Freezer Jam and great just the way they are.

One thing you might or might not find strange is the way I do the butter. I was watching Chef Bob one day and he was talked about this method. All I’m going to say is “don’t knock it until you try it”.

Lemon Scone Recipe

Ingredients

Scone

  • 2 cups Flour
  • 1/4 cup Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Butter (frozen and grated)
  • 1 tablespoon Lemon Zest
  • 1 Large Egg (beaten)
  • 1/2 cup Buttermilk (may need up to 2 more TBS.)

Glaze

  • 2 cups Powdered Sugar
  • 1/3 cup Fresh Lemon Juice
  • 1 teaspoon Lemon Zest

Directions

Step 1
In large mixing bowl whisk together flour, sugar, baking powder, soda and salt.
Step 2
Take butter out of freezer and grate. I know you think I'm nuts but it works!
Step 3
Cut butter into flour mixture until it resembles a corn meal texture.
Step 4
Add lemon zest. I like a little longer pieces of zest.
Step 5
Add egg to buttermilk and whisk.
Step 6
Add to flour mixture until all is moist stirring with a fork. Add a little more buttermilk if needed. Kneed in the bowl about 5 times.
Step 7
Form into a circle and put on a floured surface.
Step 8
Roll out dough in a circle until about 1/2" thick. Cut into 8 pieces. You can also cut our with any shaped cutter. Bake at 375 degrees for 20-25 minutes or until edges are lightly brown.
Step 9
Add powder sugar, lemon juice and zest together. Stir well with fork or whisk.
Step 10
While still warm and right out of the oven brush glaze over scones.
Step 11
Enjoy just the way they are or add a little strawberry or raspberry jam.
