Time for those weekend pancakes. Isn’t it funny how we will wait for the weekend to make a hot breakfast? I’m no different from anyone else. Pancakes usually get done on Sunday Morning before church.
My husband likes an egg planted right on top with lots of syrup!
Fluffy Pancakes Recipe
Turn pancake when small bubbles form around the edge. After flipping it will be soft when touching center of pancake. That indicates it is done.
- 4 tablespoons Butter (melted)
- 1/2 cup Sugar
- 2 Large Eggs
- 1 teaspoon Salt
- 1 tablespoon Baking Powder
- 2 1/2 cups Flour
- 2 cups Whole Milk (Add more if too thick)
- 1 teaspoon Pumpkin Pie Spice
|Preheat electric grill to 370 degrees |
|In a large bowl whisk together flour, sugar, salt, baking powder and pumpkin spice. |
|Create a well in the middle of dry mixture. Pour in milk, butter and eggs. Whisk until blended. You will still have a few lumps. That is all right. Don't over-mix. |
|Scoop about 1/4 cup batter onto grill for each pancake. Brown on both sides and serve warm with syrup, jam or honey. |
