Time for the Cobb Salad Recipe with Yogurt Basil Vinaigrette

I was asked to go on KUTV2 Morning News in the morning. When I asked what they wanted me to make the answer was, whatever you want.

My mind went to work right away. Even though we had Cobb Salad the other day I was still craving one. I had all the ingredients on hand and so Cobb Salad won out.

I know I have posted this one before. But I have had several requests to repost. This gives me a great chance to do that.

I have changed the dressing ever so slightly.

 

Coming from a large extended family. We family will look for any reason to have a gathering that includes food.

The best kind right?

I have brought this salad a few times and it seems to be one of the  favorites.

Honestly this is a salad that could be the main dish.

Cobb Salad w/Yogurt Basil Vinaigrette

Serves 8-10

Ingredients

  • 8 cups Mixed Letuce (chopped small)
  • 3 Green Onion (chopped)
  • 1 cup Chicken Breast (cut 1)
  • 3/4 cups Crumbled Blue Cheese Or Feta
  • 3 Boiled Eggs (chopped)
  • 2 Roma Tomato (chopped)
  • 6-8 pieces Cooked Bacon (chopped)
  • 1 Large Avacodo (chopped)

Directions

Step 1
Prepare all the ingredients placing lettuce first in large bowl. I like to use the serving bowl from a pasta set. Add all the rest to top of lettuce like a cobb of corn.
Step 2
Serve with my Yogurt Vinaigrette or your favorite dressing.

Blendtec Recipe Yogurt Basil Vinaigrette

Serves 8-10

Ingredients

  • 1/2 cup Extra Light Virgin Olive Oil
  • 3 tablespoons White Wine Vinegar
  • 1/2 teaspoon Balsamic Vinegar
  • 1 tablespoon Dijon Mustard
  • 1/4 cup Plain Greek Yogurt or Sour Cream
  • 1/4 cup Agave, honey or sweetener
  • 1 tablespoon Basil (3-4 leaves) (chopped (only if not using Blendtec))
  • 1/2 teaspoon Salt
  • 1/4 - 1/2 cup Feta or Blue Cheese

Directions

Step 1
Add ingredients to Blendtec in this order oil, vinegars, mustard, agave, yogurt, salt and basil. Press the dressing button. If not using blender other than Blendtec make sure basil is chopped.
Step 2
Press the dressing button. If not using Blendtec make sure basil is chopped.
Step 3
Add Feta or Blue Cheese and pulse leaving a few chunks. Add to your favorite salads just before serving. Refrigerate leftovers.
